Tzatziki

Once you’ve made a batch of this up, cover and keep any leftovers in the fridge.  I also love it on falafel, or in a gluten free wrap with lettuce, tomato, cucumber, olives, and halloumi.

Ingedients:

  • 1 Cup Plain Greek yogurt
  • 1 Garlic Clove
  • Hand full of Fresh Coriander
  • Hand full of Fresh Parsley
  • Salt & Pepper

Put yogurt in a bowl. Finely slice the garlic and add it to the yogurt. Chop the garlic, and add it to the bowl. Wash the coriander and finely chop it before adding it to the bowl. Add salt and pepper, and cover. This is best if made ahead and allowed to chill through in the fridge for at least an hour. It’s also nice if you add small pieces of cucumber.

Salsa

This is also great to keep on hand in the fridge, and add it to anything that is crying out for a bit more flavour, or on some toast with guacamole.

Ingedients:

  • 1 Punnet of Baby Tomatoes
  • 1 Small Cucumber
  • Half a Red Capsicum
  • 1 Garlic Clove
  • ½ a Red Onion
  • Hand full of Fresh Coriander
  • Hand full of Fresh Parsley
  • Salt & Pepper
  • Splash of Olive Oil & Balsamic Vinegar

Chop the tomato, cucumber and capsicum into small cubes, and place them into a bowl. Finely chop the garlic and onion, and add them to the bowl. Wash, then very finely chop the herbs and add them as well. Add salt and pepper, plus olive oil and balsamic vinegar just before serving.

Guacamole

Once you see how easy this is to make, you’ll never use store bought guacamole again!

Ingedients:

  • 1 Avocado
  • 1 Clove of Garlic
  • ½ a Lemon
  • Hand full of Fresh Coriander
  • ½ a Red Onion
  • Salt & Pepper

Scoop out avocado into a bowl and mush it up with a fork. Finely chop garlic and red onion, and add it to the bowl. Wash the coriander, then very finely chop it up before adding it to the bowl. Add the juice from the lemon, plus salt and pepper and stir well. This is best if left in the fridge for at least and hour so it can chill through.
