A Bowl Full of Amazing
This bowl full of amazing is so packed with goodness that you’ll be more than ready to conquer that mountain! It’s also great to pack into a container and take with you on a day hike.
The BEST thing about it, is that any of these ingredients can easily be swapped out for the things YOU love (or what you have in the fridge).
It’s not so much about cooking, as it is about compiling – get all of your ingredients together and pile it all in.
- Rice (I used brown)
- Corn (cut straight off the cob)
- Grated Carrot
- 3 Bean Mix, drained
- Olive Oil
- Garlic Powder
- Tzatziki (or plain Greek Yogurt)
- Guacamole (or slices of avocado)
Cook rice according to directions and allow to cool.
Cover an oven tray with baking paper. Take the stems out of the mushrooms and place them in a bowl. Add a splash of olive oil and a sprinkle of garlic powder. Stir with your hands, making sure that each mushroom is covered. Place mushrooms face down on the oven tray and cook on 180 degrees until brown (20-30 minutes). Allow to cool.
While the mushrooms are cooking, compile the rest of the ingredients. Start with a layer of spinach, then add all of the other ingredients in rows on the top of the spinach.
I also added a sprinkle of Mexican seasoning, and salt and pepper, before eating.
